Secreto truly highlights the magic of Mangalitsa pork in its flavor. It could be called a pork skirt steak due to its similarity to beef skirt steak. This cut is “hidden” between the shoulder, ribs and fatback, and for this reason it is called “secret”. The butcher must be very accurate in order to retain the precise amount of fat. This highly grained, lavishly praised cut stands out for its rich flavor and texture. Secreto is sold by the piece, typically 0.5 – 0.75 lbs each. Each pig only has 2 — one per side. Mangalitsa secreto is worth its weight in culinary gold — our favorite cut!
Chef tip: Dust lightly with dry rub, sear quickly in a very hot pan for only a few minutes per side. Cook to medium rare, slice thinly on the diagonal and enjoy the Magic!
