Chef tip:
Lightly pound steaks, dust in seasoned flour (include a pinch of thyme in seasoning),
Dip in egg wash (adding milk is optional), then coat with Panko
Saute’ quickly (Mangalitsa lard preferred) in hot pan on both sides until golden brown
(2 to 3 minutes per side)
Serve with lemon wedges — a must to complete the dish
